three pm- chop, brown, and sweat various things for sausage making
four pm- sausage making
five pm- add ice to the turkey’s in my pick up truck (overnight in the water bath improves meat quality)
six pm- shower. sit
seven pm- sausage. pan. dinner.
eight pm- head to the restaurant for a friend’s tv show’s debut on the cooking channel. (the four coursemen)
ten pm- sleep happy
why did i share my day with you? hour by hour? well, i dunno, i just kinda liked the way it went. if you read that schedule, and didn’t like it, you must really love what you do. cause i know, if you asked one-year-ago-me what i thought about this “busy day”, i woulda begged for it.
just to be clear, today-jared doesn’t take this for granted either. that’s why ten pm is sleep happy. not pass out, or crash, or collapse, or some other typical state of exhaustion. sleep happy. i get to use my brain and my brawn, all day long—IN THE SUN—i get to grow food and cook food with my hands.
and today, one good friend walked me through slaughtering my first ever turkey, and another taught me how to make sausages from scratch.
i’m so excited it’s thanksgiving—i have so much to be thankful for.
